5 Ingredient Okra Gumbo

 

 

My momma used to make this okra gumbo all the time.  We had a garden out in the country and okra was usually in it.  If we didn’t grow it, a neighbor did and we’d get a TON from them.  I never cared for this recipe as a child…but like most…I grew into my tastes and loved it the older I got.

It’s so easy and HEALTHY!  We’re talking fat free, carb free,and hardly any calories too.  I like to pour a few ladles of this gumbo over a can of black-eyed peas and that is the perfect meal for me!  MMMM MMMM!!!!  Enjoy!

5 Ingredient Okra Gumbo

  • 1 pound okra cut into 1-2 inch pieces
  • 1 can Ro-tel
  • 1 can diced tomatoes in sauce
  • 1 white or yellow onion, chopped
  • 1 c. water

(Salt and Pepper to taste)

Directions:

Dump all of the above into a good size pot and bring to a boil for a good 20-minutes or until okra is tender and onions are cooked to your liking.  Salt and pepper to taste.  That’s it!  If you’d like to thicken it up a bit, just ladle out some of the gumbo juice after cooking, mix with 1 tablespoon flour or 1 tablespoon cornstarch and then mix back into the pot.  Simmer for a few minutes to thicken.
