Chewy Almond Butter Cookies

I have a new obsession.  It’s Almond Butter.  I love the taste of almonds, but my teeth can’t take chewing them.  So, I turned my new obsession into cookies.  This Chewy Almond Butter Cookie recipe came out perfectly chewy and awesome.  You must give them a try!

Almond Butter Cookie Ingredients

1 c. butter

1 c. almond butter

1 c. sugar

1 c. brown sugar

2 eggs

2 1/4  c. flour

1 tsp. baking soda

Preheat Oven to 325 degrees.

Combine butter, almond butter, and sugars until smooth.  Mix in eggs.  Beat until smooth (by hand OR mixer…either will do!).  Add flour and baking soda.  Combine.  The dough will be soft.  This is fine.  DO NOT ADD MORE FLOUR.

You can chill these and follow these steps, or use straight away.

Form 1 inch balls (about 1 tablespoon of dough) onto a PARCHMENT COVERED cookie sheet.  Flatten each cookie slightly with a fork.  Bake 8-10 minutes. They will still look a bit doughy when you taken them out at this stage, but as they cool, they will cook more, and you will have a deliciously chewy cookie.


  1. Sounds good but two cups of sugar seems like a lot to me. Any suggestions for cutting the amount of sugar but still having a tasty cookie?

    • Hmmm. I think you could sub honey for 1 cup and try that. I’ve never tried it personally, but it would be yummy I’m sure ! Not sure how it would affect texture.

  2. They sound AMAZING!! I love almond butter, too! Never thought to make cookies with it.

    Have you ever had Trader Joe’s Cookie Butter? Oh my heavens. It’s sinful. Thank goodness we dont live anywhere near a Trader Joes!
