Chewy Peanut Butter Cookies

Chewy.  Sweet.  Salty.  Peanut-Butter Frosted.  Easy.  Fool-Proof.  Lastly, I can guarantee these cookies will require you to do an extra hour of Zumba.

Cookie Ingredients

1 c. butter

1 c. peanut butter

1 c. sugar

1 c. brown sugar

2 eggs

2 c. flour

1 tsp. baking soda

Preheat Oven to 325 degrees.

Combine butter, peanut butter, and sugars until smooth.  Mix in eggs.  Beat until smooth (by hand OR mixer…either will do!).  Add flour and baking soda.  Combine.  The dough will be soft.  This is fine.  DO NOT ADD MORE FLOUR.

You can chill these and follow these steps, or use straight away.

Form 1 inch balls (about 1 tablespoon of dough) onto a PARCHMENT COVERED cookie sheet.  Flatten each cookie slightly with a drinking glass bottom that has been dipped in white granulated sugar.  Bake 8-10 minutes. They will still look a bit doughy when you taken them out at this stage, but as they cool, they will cook more, and you will have a deliciously chewy cookie.

Peanut Butter Frosting:

2 Tbls.  peanut butter

2 Tbls. butter or maragarine

1/4c. cup milk.

Heat these 3 ingredients on med,/low heat in a small saucepan until smooth.  Remove from heat.

After 5 minutes of cooling, add in:

2 c. Powdered Sugar

Ice cookies and, if you’re feeling fancy, add some coarsely chopped peanuts to the top.

    Those look great! I had the same logic about working out, but I bought cookie dough at the grocery store instead.

    • Sounds like our minds think alike 😉 LOL! Sadly…all I can think is…what kind of dough did you buy? Chocolate chip? Peanut Butter? Sugar cookie dough? White chocolate peanut butter? LOL!

        Chocolate Chip and Gingerbread Spice. I gave a lot of them away. My last day at my old job was last Friday so took most of the Chocolate Chip to my old co-workers and we have new neighbors so took them the rest of the Chocolate Chip and half the Gingerbread Spice. I had 4 cookies myself and froze the rest for another day. I really didn’t want to do that extra hour of zumba. 😉 My husband gave up carbs for lent so I didn’t have to save any cookies for him luckily. LOL!

        • Oh wow! Gingerbread Spice would be the death of me!!!! I need to find somewhere to take all my blog baking projects, or else this baby weight isn’t going to go ANYWHERE.
