Stuff-a-licious! Stuffed Bell Peppers

One of our family’s favorite recipes!  It was my momma’s recipe that she taught me.  They’ll make ya feel good ‘n stuffed for sure!

Stuffed Bell Peppers

Ingredients
  • 1 pound hamburger meat
  • 4-5 green bell peppers
  • 1 yellow or white onion
  • 1 can diced tomatoes in sauce
  • 1 bag of boil in a bag regular rice (uncooked)
  • Veg. or olive oil
  • salt
  • pepper
  • water
  • lots of grated cheddar cheese

 

Here’s the step by step!  It’s easy and SOOO good.

The ingredients, minus the rice. I forgot that. Pic of the brand I use is below…

The rice. I use one bag per 1 pound of hamburger meat.

Finely chop your onion and 1 of your bell peppers and saute in a few tablespoon oil under tender.

Meanwhile, wash, core and deseed your other 4 bell peppers and boil them in a large pot of water until desired tenderness. I enjoy a very soft bell pepper myself. Doesn’t make presentation AS pretty–so if you want them to be stiff enough to stand, watch them close!

Add your meat once the chopped veggies have cooked down.

Brown….

Add the can of tomatoes, sauce and all.

Same pic as above, but I missed a pic. Now, add 1 (maybe a tad more) can of water.

Add the bag of rice…..

Now cover (not pictured) and let cook 15 minutes or so, stirring occasionally. Rice should be tender and water should be evaporated when done. If you notice crunchy rice and not much water left, add a bit more. Hard to mess it up, really. If you add too much water, let it just cook off.

Now drain your cooked bell peppers….

Place the bell peppers in a baking dish open side up, and stuff ’em with the meat/rice mixture…

Cover them in cheddar….

Pop ’em in a 350 degree oven for 5-10 minutes until cheese is melted (and browned if that tickles your taste buds)

Serve….

**Feel free to vegetarian-a-fy this one or just use turkey meat.  We’re ground beef type folk–but I think you could vary this one up!

    This is the 3rd recipe of yours that I have tried and as usual it was delicious! I left my bell peppers a little hard so they would stand but i think next time i’ll make them very soft too. Thanks again for your help with supper!!
