The “I Can’t Go to the Weight Watchers Meeting this week” Dessert

No holiday in our family is complete without this dessert.  It’s so simple…but so good.  Addictive, really.  I’ve not seen it posted online anywhere, so I thought I’d share.  We call it Layered Pudding.

Gluten Free Option:  Just substitute Rice Four for the regular flour in the crust and that’s all it takes to make this one Celiac-friendly!

Ingredients:

Crust:

1 stick butter

1 cup pecans

1 cup flour

2nd Layer:

8 ounces cream cheese, softened

1 cup powered sugar

1 tsp. vanilla

1/2 large carton ‘whipped topping’ AKA Cool Whip.  Generic isn’t allowed, folks.

3rd Layer:

2 small boxes chocolate or vanilla instant pudding (or 1 of each)

2 1/2 cups milk (I use 2%)

Last Layer:

Other half of the large container cool whip

Directions in Picture Form:

The ingredients. Minus the vanilla pudding (I did two different layers this time).

 

Flour, Butter, Pecans…

 

Combine via a pastry cutter or your hands…

 

Once it’s nice and crumbly, flatten into a greased 9×13 inch pan. My pan was a bit smaller b/c my only 8×13 was in the dish washer..story of my life…

 

Flatten like so…

 

All ready for the oven…which should be pre-heated to 350 degrees.

 

In she goes….for 20-25 minutes or until golden brown…

 

Out she comes…nice and brown! Now, let this cool completely and start working on your other layers.

 

I assume the instant pudding isn’t rocket science.  No photos of that.  I made a chocolate and vanilla layer using 1/2 the milk for each box.  Usually I only do chocolate.  The Spirit moved me today and I also did vanilla.  Up to you!

Combine your softened cream cheese, vanilla, and powered sugar in a bowl and mix until smooth…

 

Nice and smooth….

 

Into the cream cheese mixture, fold in 1/2 large carton of cool whip…

 

Fold it gently. This is the best mixture of ingredients ever to exist. Attempt not to eat the entire bowl!

 

After it’s fully combined, refrigerate.

 

Once your crust is cool, gather your crust and all the ‘layers’…

 

First goes the glorious cream cheese Cool Whip mixture…

 

Now the chocolate pudding….

 

You can JUST do the chocolate or the vanilla. This layer would look much thicker once cut if you went that route…

 

I opted for vanilla as well…

 

Top it off with the other half of the Cool Whip.

 

The first cut. Oh so good. I know it seems so not special…but it is!

 

Yes, please!

 

Layered pudding, it’s what’s for lunch. No really. Make it! You’ll love it!

 

Skip the weigh in this week…cuz it ain’t gonna be purdy!

    We call this dessert Possum Pie where I am from :). Not sure why and the title is a bit disturbing… but oh this is such a gooooooooooood dessert! Loving your blog by the way. 11 weeks pregnant myself and planning to homeschool my own girl (3 1/2), your blog gives me lots of laughter and encouragement!!
